If I just wire the ground onto my outlet is that ok or do I have to ground to the box as well? Should I switch to plastic boxes? Thanks.

Short answer is, it makes your life easier. I use junction boxes in attics mainly for switches. 3 and 4 gang boxes for switches get really tight fast, especially with 3 way switches having the extra .
